You must have an iCloud account established before you can backup. I strongly recommend performing a manual backup before jailbreaking any device. You never know when you may need to restore to the baCKUP. I say again, always backup in iCloud before performing a jailbreak. If you have your device set to do automatic backups I still recommenmd a manual backup before a new jailbreak. In order to perform a manual backup follow these simple steps listed below.

2. Tap on “iCloud” and scroll to the bottom, tap on “Storage & Backup”-Inside here you can manage you storage space. Delete or turn off any app you wish to stop storing data for in cloud. This will help save space in iCloud. OS will show an estimated time for the backup to complete, and a progress bar to watch. If it is off, flick the iCloud Backup switch to green. Then tap “Back Up Now” to start the process. How long it takes depends on three factors - how fast your Internet is, how fast the Apple servers are currently going (never normally an issue), and how much data needs to be uploaded. Choose the iCloud option on the left. The “Encrypt iPhone backup” is only if you are backing up to the computer. So for iCloud, ticking the Encrypt box is not needed. I should also point out here that if you choose to back up to your computer, the iCloud feature on your iOS device will switch off. The second way to back up your phone, other than manually pressing the button, is to automate the process. First make sure that iCloud is switched on. Make sure your iOS device is plugged into the charging cable. Ensure the device is locked.

Check to make sure the wifi connection is working fine. If you do these four things, Apple will automatically backup your phone to your iCloud account. For me, the backup happens during the night, because that’s when it’s locked and charging. A lot of people like to talk smack about iCloud, saying it’s the worst cloud service ever. Well it may not be the best when you stack it up against the likes of Dropbox and Google Drive. But for the purposes of backing up your iOS devices, it works like a charm.

How do I know that everything from my IPhone successfully backed up onto my computer via ITunes. Specifically photos and contacts, Max, you should have contacts and photos synced to you iCloud account, as well as have them saved in their respective Mac apps. Off hand I can't remember where the folder is located by default for you iOS backups. Try looking in your iTunes Media folder. Hmm, Pip, those issues are difficult for me to advise on.
